Duxa's Candied Coconut Treats – Easy & Sweet Tropical Bites

Ingredients

7.8 oz shredded coconut5.6 oz sugar1 whole egg2 egg whitesCandied cherries (optional)Sliced almonds (optional)

Directions

Makes about 20 treats.

  1. In a bowl, beat the whole egg, egg whites, and sugar until you obtain a voluminous mixture.
  2. Add the shredded coconut and mix well until it combines with the previous mixture.
  3. Preheat the oven to 350°F (180°C).
  4. Line a baking sheet with parchment paper.
  5. Shape the mixture into small balls and place them on the parchment paper (if you choose, place a candied cherry or sliced almonds on top of each ball).
  6. Lightly oil your hands to prevent the coconut from sticking while shaping the balls.
  7. Bake for about 25 minutes at 350°F (180°C).
  8. They are ready when they start to turn a toasted color.
