Ingredients

2 pounds of veal, cubed1/2 chouriço sausage1 onion1 green bell pepper1 orange bell pepper1/4 of a pineappleSeasoning:3 garlic clovesCoarse salt to taste1/2 teaspoon of ground bay leaf1 teaspoon of smoked paprikaFresh parsley (to taste)Olive oil

Preparation

  1. In a mortar, crush the garlic with the salt until it forms a paste.
  2. Add the bay leaf, paprika, and parsley, crush again, and then add olive oil to bind everything together and set aside.
  3. Cut all the ingredients for the skewers so they are the same size.
  4. Assemble the skewers by first placing the bell pepper, onion, sausage, pineapple, and veal, repeating at least twice.
  5. Brush the skewers on all sides with the reserved seasoning.
  6. Heat the grill (stovetop or electric), and when it's very hot, grill the skewers on all sides, brushing with the remaining sauce.
  7. Serve immediately, accompanied by oven-baked fries or any other side dish you prefer.
