3 eggs2 cups of sugar2 cups of self-rising flour1/2 cup of oil1 cup of milk3.5 oz (100 g) of shredded coconut1 tsp of baking powderTopping:1 cup of hot milkShredded coconut to taste

Preparation

  1. Grease and flour a 13 x 9-inch baking pan.
  2. Preheat the oven to 350°F (180°C).
  3. Beat the eggs with the sugar until the mixture is pale and fluffy.
  4. Add the oil and milk, and continue to beat.
  5. Add the shredded coconut and mix well.
  6. Sift in the flour and baking powder, and beat on low speed until well incorporated.
  7. Pour the batter into the prepared pan and bake for 40 minutes (check doneness with a toothpick).
  8. Let the cake cool in the pan for 10 minutes, then turn it out onto a large rectangular plate.
  9. While the cake is still warm, pour the hot milk over the entire surface (it might seem like too much, but the cake will absorb all the milk. You can even add a bit more milk if desired).
  10. Sprinkle with shredded coconut.
  11. Once cooled, cut into squares.
