Recipe Tips

Ensure that your ground almonds are finely ground to avoid a gritty texture in the tart. You can achieve this by pulsing them in a food processor until they reach a powdery consistency, but be careful not to over-process them into almond butter.
When measuring the sugar, use a scale for accuracy, as packing the sugar too tightly in a measuring cup can lead to an overly sweet tart. Additionally, consider reducing the sugar by 1/4 cup if you prefer a less sweet dessert, especially since the pumpkin jam adds sweetness.
After combining the ingredients, let the batter rest for about 30 minutes before baking. This allows the ground almonds to absorb moisture, resulting in a moister and denser tart once baked.

Frequently Asked Questions

Can I substitute ground almonds with another type of nut flour?

Yes, you can substitute ground almonds with ground hazelnuts or walnuts. Keep in mind that the flavor and texture of the tart may change slightly, so choose a nut that complements the other flavors.

How should I store the almond tart to maintain its moisture?

To keep the almond tart moist, store it in an airtight container at room temperature for up to 3 days. For longer storage, you can refrigerate it for up to a week or freeze it for up to 3 months. If freezing, wrap it tightly in plastic wrap and then in aluminum foil.

What should I do if the tart doesn’t rise or is dense after baking?

If the tart is dense or doesn’t rise properly, it may be due to overmixing the egg mixture or not beating the eggs sufficiently to incorporate air. Ensure you mix the eggs just until combined and avoid overcooking the almond mixture after adding the eggs, as this can also lead to a denser texture.

Recommended Drink Pairings

Wine

Portuguese: Alvarinho - This white wine offers bright acidity and floral notes that complement the sweetness of the almond tart beautifully.

General: Moscato - A lightly sparkling, sweet wine that pairs well with desserts, enhancing the flavors of the tart without overpowering it.

Beer

Portuguese: Super Bock - This lager has a crisp, clean finish that provides a refreshing contrast to the rich sweetness of the tart.

General: Wheat Beer - Its light and fruity characteristics make it a delightful pairing with the almond and pumpkin flavors in the dessert.

Other Beverages

Espresso: A shot of rich espresso balances the sweetness of the tart, enhancing the almond flavors while providing a satisfying finish.
