Ingredients

5 eggs1 cup + 2 tablespoons (about 8.8 ounces) sugar2 cups (about 10.6 ounces) cooked sweet potatoes, peeled and mashedJuice and zest of 1 orange1/2 cup + 2 tablespoons (about 2.3 ounces) all-purpose flour1/2 cup + 1 tablespoon (about 2.3 ounces) cornstarch1 teaspoon baking powder1 heaping tablespoon shredded coconut

Preparation

  1. Beat the egg yolks with the sugar until you get a whitish mixture.
  2. Add the mashed sweet potato and orange zest.
  3. Mix the baking powder with the flours and coconut and add this mixture to the previous mixture and mix well.
  4. Beat the egg whites until stiff peaks form and fold them into the batter.
  5. Bake at 350°F in a greased and floured pan for about 40 minutes or until cooked through.
  6. Remove from the oven, unmold, and prick it with a toothpick.
  7. Pour the orange juice slowly and evenly over the top so that the cake absorbs the juice.
