Recipe Tips

For a creamier texture, consider blending the soup after cooking. Use an immersion blender directly in the pot, or transfer batches to a countertop blender. Be careful with hot liquids; allow the soup to cool slightly before blending to prevent splatter.
To enhance the flavor profile, sauté the chopped onion and garlic in the olive oil before adding the other vegetables. This will release their essential oils and create a more aromatic base for your soup.
Avoid overcooking the vegetables. Once the potatoes and carrots are tender, remove the soup from heat to prevent them from becoming mushy. Aim for a cooking time of about 20-25 minutes after adding all ingredients to the pot.
