Ingredients
1 tablespoon olive oil1/2 medium onion, chopped3 garlic cloves, minced1 tablespoon tomato paste3 cups water1 1/2 cups rice, uncooked2 bay leaves1/2 tablespoon smoked paprika1 teaspoon ground black pepper1/2 teaspoon salt1 (15 ounce can) kidney beans, drained and rinsed

Preparation
- In a medium saucepan over medium-high heat, add olive oil.
- Once heated, add onions and cook until softened and lightly browned, about 3-4 minutes.
- Add garlic and cook for another 2 minutes, or until fragrant.
- Add tomato paste and scrape the bottom of the pan using a wooden spoon, loosening up any browned bits from the bottom.
- Add water, rice, bay leaves, and spices to the pan and bring to boil.
- Reduce to simmer and cook until rice is soft and water is absorbed, about 10 minutes.
- Add kidney beans and cook until heated through, about 1-2 minutes.
- Fluff with fork before serving.
