Peixinhos da Horta Recipe: Crispy Portuguese Style Tempura
Ingredients
Directions
- Trim the ends of the green beans and cut them in half vertically or crosswise if pods are exceptionally long.
- Bring a pot of salted water to a boil and cook the green beans for 4 minutes until tender-crisp.
- Drain the beans immediately and allow them to cool completely to ensure the batter adheres properly.
- Whisk the flour, baking powder, and olive oil in a large bowl, seasoning with salt and pepper.
- Pour in the beer and lemon juice, stirring until the mixture is thick and smooth.
- Incorporate the eggs one by one, beating thoroughly after each addition.
- Let the batter rest for 30 minutes to allow the gluten to relax and the carbonation to settle.
- Heat frying oil to 180°C. Dip each cooled green bean into the batter, coating it entirely.
- Fry in small batches until the coating is puffed and golden brown.
- Transfer the fritters to a plate lined with paper towels to drain excess oil.
