Ingredients
2 cups (473 ml) whole milk + 2 tbsp (30 ml) whole milk2 large egg yolks3.5 oz (100 g) short-grain rice2.8 oz (80 g) granulated sugar1 whole cinnamon stick1 small strip of lemon peelGround cinnamon to taste
Equipment:
Tall saucepanSmall mixing bowlWooden spoon4 serving bowls
Directions
- Place the milk in a tall saucepan and add the rice, cinnamon stick, and lemon peel.
- Let it simmer over very low heat, stirring occasionally, for about 30 to 40 minutes until the rice opens up and becomes very soft.
- Remove the cinnamon stick and lemon peel.
- In a small bowl, mix the two egg yolks with 2 tablespoons of milk.
- Add the sugar and egg yolks to the rice and mix well.
- Return to low heat and cook for another 5 to 10 minutes until it thickens, stirring constantly.
- Divide the rice pudding into four bowls and sprinkle with a little ground cinnamon.
- Serve while still warm.
