Recipe Tips

For a perfectly crispy crust, blind bake the puff pastry for 10-15 minutes at 180°C (350°F) before adding the custard filling. This will help prevent the pastry from becoming soggy as the custard cooks.
When mixing the egg yolks with sugar and cornstarch, whisk vigorously until the mixture is pale and slightly thickened. This helps incorporate air and ensures a smooth custard texture, avoiding any lumps.
Avoid overcooking the custard once it's on the heat; cook it gently over medium heat and stir constantly until it thickens. Overcooking can cause the custard to curdle, leading to an undesirable texture.

Frequently Asked Questions

Can I substitute the puff pastry with another type of dough?

Yes, you can substitute puff pastry with a shortcrust pastry or a pie crust if you prefer a different texture. Keep in mind that the baking time may vary slightly depending on the dough you choose.

How should I store the custard tart after baking?

Once the custard tart has cooled to room temperature, it can be stored in the refrigerator. Cover it with plastic wrap or a lid, and it will stay fresh for up to 3 days.

What should I do if my custard mixture does not thicken?

If the custard mixture doesn't thicken, make sure you are cooking it over medium heat while stirring continuously. If it remains too liquid, you can dissolve an additional tablespoon of cornstarch in a little cold milk and whisk it into the mixture, then return it to heat until thickened.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light, slightly effervescent wine complements the creamy texture of the tart and balances the sweetness with its refreshing acidity.

General: Moscato - The fruity and floral notes of Moscato enhance the vanilla in the custard while its sweetness harmonizes with the sugar in the dish.

Beer

Portuguese: Super Bock - This popular lager has a crisp profile that cuts through the richness of the custard, making it a refreshing pairing.

General: Lager - A clean and light lager provides a pleasant contrast to the dessert's creaminess without overpowering its delicate flavors.

Other Beverages

Coffee: A smooth, medium-roast coffee adds a rich, nutty flavor that complements the sweet custard while providing a delightful contrast in bitterness.
