Instructions

  1. Preparation: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.

  2. Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.

  3. Creaming: In another large bowl, using an electric mixer or by hand, cream the softened butter and granulated sugar together until light and fluffy.

  4. Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest, if using.

  5. Alternate Mixing: Gradually add the dry ingredients to the wet mixture, alternating with the plain yogurt. Begin and end with the flour mixture, ensuring everything is well combined but not overmixed.

  6. Baking: Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean.

  7. Cooling: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

  8. Powdered Sugar: Dust it with the powdered sugar.

  9. Serve and Enjoy: Slice the cake and serve it with your favorite beverage, such as tea or coffee.
