Instructions
-
Preparation: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round cake pan or line it with parchment paper for easy removal.
-
Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
-
Creaming: In another large bowl, using an electric mixer or by hand, cream the softened butter and granulated sugar together until light and fluffy.
-
Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract and lemon zest, if using.
-
Alternate Mixing: Gradually add the dry ingredients to the wet mixture, alternating with the plain yogurt. Begin and end with the flour mixture, ensuring everything is well combined but not overmixed.
-
Baking: Pour the batter into the prepared cake pan and smooth the top. Bake in the preheated oven for about 40-45 minutes or until a toothpick inserted into the center comes out clean.
-
Cooling: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
-
Powdered Sugar: Dust it with the powdered sugar.
-
Serve and Enjoy: Slice the cake and serve it with your favorite beverage, such as tea or coffee.
