Paula's Portuguese Bean Soup Recipe


Portuguese bean soup is a traditional dish from the Azores, a group of Portuguese islands located in the Atlantic Ocean. It's a hearty soup that's perfect for colder weather, and it's filled with beans, vegetables, and linguiça.

Ingredients

1 pound of Portuguese linguiça, sliced into 1/4-inch rounds1 onion, chopped2 garlic cloves, minced2 carrots, peeled and chopped2 potatoes, peeled and chopped1 cup of chopped cabbage1 can (15 oz) washed and drained kidney beans1 can (15 oz) of diced tomatoes6 cups of chicken broth1 bay leafSalt and pepper, to taste

Instructions

  1. In a large pot, cook the linguiça over medium heat until it's browned and crispy, about 5 minutes. Remove the linguiça sausage from the pot and set it aside.
  2. Add the onion and garlic to the pot and cook until they're soft, about 5 minutes.
  3. Add the carrots, potatoes, and cabbage to the pot and cook for another 5 minutes.
  4. Add the kidney beans, diced tomatoes, chicken broth, bay leaf, and the cooked linguiça to the pot. Stir and bring to a boil.
  5. Once the soup is boiling, reduce the heat to low and let it simmer for 30-40 minutes, or until the vegetables are tender.
  6. Season to your liking with salt and pepper to taste.
  7. Remove the bay leaf before serving.
  8. Serve the soup hot with crusty bread on the side.
