- Olive oil should be warmed in a large pot over medium heat. Add the onions and garlic, and sauté until they are softened and fragrant.
- Add the beef and brown it on all sides, about 5-7 minutes.
- Add the tomato paste and stir to coat the beef and vegetables.
- Pour in the beef broth and red wine, and add the bay leaves, paprika, cumin, oregano and cinnamon and stir everything together.
- The mixture should be heated until it boils, then it should be simmered for about an hour.
- After an hour, add the potatoes and carrots to the pot. As desired, season the food with salt and pepper.
- Simmer for another 30-40 minutes, or until the vegetables are tender and the beef is cooked through.
- Serve hot, garnished with chopped parsley.
