- Preheat grill to medium-high heat.
- In a large bowl, whisk together olive oil, minced garlic, smoked paprika, red pepper flakes, and salt.
- Add the pork, chouriço, and green bell peppers to the bowl with the marinade. Toss everything together until coated evenly.
- Thread the pork, chouriço, and green bell peppers onto the soaked wooden skewers, alternating between the ingredients.
- Place the skewers on the preheated grill and cook for 12-15 minutes, turning occasionally, until the pork is cooked through and the vegetables are tender.
- Serve the kebabs hot, garnished with fresh parsley or cilantro if desired.
