Recipe Tips

Soak the beans overnight in water to reduce cooking time and improve digestibility. If short on time, use the quick soak method: boil the beans for 2 minutes, then let them sit covered for 1 hour before draining and cooking.
When sautéing the onions and garlic, ensure they are cooked until soft and translucent before adding the meats. This develops a deeper flavor and prevents the garlic from burning, which can lead to bitterness in the stew.
Avoid adding salt to the cooking liquid until the beans are fully cooked, as salt can toughen the beans and prevent them from softening. Instead, wait until near the end of cooking to season to taste.
