Recipe Tips

When sautéing the onions and garlic, ensure they are cooked on medium heat to avoid burning. If they brown too quickly, lower the heat and add a splash of water to deglaze the pan, which will enhance the flavor without compromising the dish.
For a creamier texture, consider blending a portion of the stew after cooking, then stirring it back into the pot. This can give the stew a richer mouthfeel while still leaving some whole peas and vegetables for texture.
Avoid overcooking the eggs; simmer them in the stew just until the whites are set but the yolks remain runny. This will create a delightful contrast when served, enhancing the overall eating experience.

Frequently Asked Questions

Can I substitute fresh peas for frozen peas in this recipe?

Yes, you can use fresh peas instead of frozen peas, but you may need to adjust the cooking time. Fresh peas cook faster, so add them towards the end of the cooking process, around 5-10 minutes before finishing.

How should I store leftovers of the green pea stew?

Allow the stew to cool completely before transferring it to an airtight container. It can be stored in the refrigerator for up to 3-4 days or frozen for up to 3 months. Reheat thoroughly before serving.

What can I use instead of chouriço if I want a vegetarian option?

You can substitute chouriço with vegetarian sausage, smoked tofu, or skip it altogether and add more vegetables, like mushrooms or additional carrots, for flavor.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This light and refreshing wine complements the earthy flavors of the green peas and the spices in the stew.

General: Sauvignon Blanc - Its vibrant acidity and herbaceous notes enhance the freshness of the stew's ingredients.

Beer

Portuguese: Super Bock - This pale lager's crispness pairs well with the hearty nature of the stew without overpowering it.

General: Pilsner - A classic Pilsner offers a refreshing balance to the richness of the chouriço and the olive oil in the dish.

Other Beverages

Red Wine Vinegar Spritzer: A light spritzer made with red wine vinegar and sparkling water adds a tangy contrast that complements the stew's flavors.
