Directions

  1. Wash and clean the livers.
  2. Place the paprika, garlic powder, piri piri sauce, and salt and pepper to taste in a plastic bag, add the livers and shake it well until all the livers are covered by the spices.
  3. In a frying pan, heat the olive oil, saute the livers and minced onions until they are well browned (about 5 to 6 minutes).
  4. Serve and enjoy.

Recipe Tips

Soak the chicken livers in milk for at least 30 minutes before cooking to help remove any bitterness and enhance their flavor. This will also result in a creamier texture.
To achieve a perfectly caramelized onion, cook them slowly over medium-low heat for at least 15-20 minutes, stirring occasionally. This will deepen their flavor and add sweetness to the dish.
Be careful not to overcook the chicken livers; they should be cooked until just slightly pink in the center (about 3-5 minutes per side). Overcooking can lead to a tough and grainy texture.

Frequently Asked Questions

What can I substitute for piri piri sauce if I can't find it?

You can use any hot sauce you prefer, such as sriracha or chili garlic sauce, to maintain the spicy flavor. Alternatively, you can mix equal parts of hot sauce with a touch of lemon juice or vinegar for a similar tangy heat.

How should I store leftovers, and how long do they last?

Store any leftover cooked chicken liver in an airtight container in the refrigerator. They can last for up to 3-4 days. If you want to freeze them, place the livers in a freezer-safe container; they can be stored for up to 3 months.

What should I do if the chicken livers are overcooked and tough?

To avoid overcooking chicken livers, cook them quickly over high heat, and remove them from the heat as soon as they are no longer pink inside. If they do become tough, consider adding them to a creamy sauce or pureeing them into a pâté to enhance their texture.

Recommended Drink Pairings

Portuguese: Douro Valley Red - This red wine's robust flavor profile complements the rich, savory notes of the chicken liver and spices.

General: Merlot - A smooth and fruity Merlot balances the intensity of the dish while enhancing its savory elements.

Beer

Portuguese: Super Bock - This classic Portuguese lager offers a crisp and refreshing contrast to the richness of the chicken liver.

General: Pale Ale - The hoppy bitterness of a Pale Ale cuts through the richness of the dish, providing a delightful balance.

Other Beverages

Hi I was wondering if you could help me with this .my voa, made a recipe that used pork and pork liver cubed, it had onions and parsley in it. It had a sauce that was brown . Unfortunately that's all I can remember about it, other then it was wonderful.
Sadly she passed before I could collect all of her recipes. She called it molho fei(sp) not sure of spelling, her family came from Sao Miguel, if that helps.

Sorry Bernadette, doesn't ring a bell, maybe it was her own recipe, people do that all the time and add their own twists to a recipe.
