Directions

  1. Peel the onions and garlic and place in cheesecloth, tie the cheesecloth into a bundle for easy removal later.
  2. In a large pot, add all of the ingredients except for the pasta. Cook on medium heat just until the potatoes are slightly cooked.
  3. Add the pasta and cook until pasta is al dente and potatoes are tender.
  4. Adjust salt and pepper to taste.
  5. Remove the onion and garlic and serve.

Recipe Tips

When preparing the soup, sauté the diced onion and whole garlic cloves in the olive oil before adding the water and other ingredients. This step enhances the flavor base of the soup, making it richer and more aromatic.
To avoid overcooking the macaroni, add it to the soup only in the last 10 minutes of cooking. This will ensure the noodles are cooked al dente and maintain a pleasant texture rather than becoming mushy.
If you're using dried beans instead of canned, soak them overnight and cook them separately until tender before adding them to the soup. This prevents the soup from becoming too starchy and allows for better control over the texture of the beans.

Frequently Asked Questions

Can I substitute the kidney beans with another type of bean?

Yes, you can substitute kidney beans with other types of beans such as pinto beans, black beans, or navy beans. Just make sure to rinse and drain them if using canned beans.

How should I store leftovers of the macaroni and bean soup?

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. You can also freeze the soup for up to 2-3 months. To reheat, thaw in the refrigerator overnight and then heat on the stovetop or in the microwave.

What should I do if the soup is too thick or too thin?

If the soup is too thick, add a little more water or vegetable broth to reach your desired consistency. If it's too thin, you can let it simmer uncovered for a few more minutes to reduce and thicken it, or add a bit more pasta to absorb excess liquid.

Recommended Drink Pairings

Wine

Portuguese: Vinho Verde - This refreshing, slightly effervescent white wine pairs well with the lightness of the soup and enhances the flavors of the garlic and spices.

General: Sauvignon Blanc - The crisp acidity and herbal notes of Sauvignon Blanc complement the earthy beans and spices in the soup beautifully.

Beer

Portuguese: Super Bock - This popular Portuguese lager offers a light malt profile that balances well with the heartiness of the soup.

General: Pilsner - A classic Pilsner provides a crisp, clean taste that refreshes the palate between bites of the savory soup.

Other Beverages

Herbal Tea: A soothing herbal tea, such as chamomile or mint, provides a gentle, aromatic contrast to the flavors of the soup.
