Recipe Tips

When making the pastry, ensure that the butter is at room temperature before creaming it with the sour cream. This helps in achieving a smooth and well-blended dough.
For the filling, finely chop the walnuts to ensure an even distribution throughout the mixture. This prevents large chunks from making the filling uneven and difficult to work with.
Avoid over-whipping the egg whites for the filling; whip until medium peaks form. Over-whipped egg whites can lead to a dry texture in the filling, making it less enjoyable.

Frequently Asked Questions

Can I substitute the walnuts in the filling with another nut or ingredient?

Yes, you can substitute walnuts with pecans or almonds for a different flavor. If you need a nut-free option, use crushed graham crackers or a mixture of seeds like sunflower and pumpkin seeds.

How should I store the Travesseiros after baking?

Store the baked Travesseiros in an airtight container at room temperature for up to 3 days. For longer storage, they can be frozen for up to a month. Just thaw them at room temperature before serving.

What can I do if the dough is too sticky to roll out?

If your dough is too sticky, try chilling it in the refrigerator for an additional 15-30 minutes. You can also lightly flour your work surface and rolling pin to make it easier to handle it while rolling.

Recommended Drink Pairings

Wine

Portuguese: Madeira - This fortified wine has rich, nutty flavors that complement the sweetness and nuttiness of the walnut filling.

General: Late Harvest Riesling - The sweetness and acidity of this wine balance the rich pastry and enhance the flavors of the filling.

Beer

Portuguese: Super Bock - A classic Portuguese lager, its light and crisp profile pairs well with the rich pastry without overpowering it.

General: Hefeweizen - The fruity and spicy notes of this wheat beer complement the flavors of the dessert while providing a refreshing contrast.

Other Beverages

Espresso: A shot of espresso adds a bold coffee flavor that balances the sweetness of the pastries beautifully.
