Sour Bean and Chouriço Soup with Pasta | Easy Rustic Recipe

Ingredients

1 onion, chopped 2 cloves of garlic, chopped 3 tablespoons of olive oil 1 teaspoon of paprika 1 tablespoon of tomato paste 1/2 chouriço, cut into 4 pieces 1 can of red beans 2 big potatoes, cut into cubes2 handfuls of rigatoni pasta Salt (to taste)Pepper (to taste)1 and 1/2 liters of waterVinegar

With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. In a pan over medium heat,  cook the onions and garlic in the olive oil for about 3 to 4 minutes.
  2. Add the tomato paste, paprika, beans, salt, pepper, the chourico and stir.
  3. Add the water, stir and bring to a boil, than add the potatoes and the pasta and cook for another 10 minutes.
  4. When serving,  add one tablespoon of vinegar to each plate and stir.

Recipe Tips

To enhance the depth of flavor, sauté the chopped onion and garlic in the olive oil until they are translucent and fragrant before adding the paprika and tomato paste. This will help to develop a richer base for your soup.
When adding the rigatoni pasta, consider cooking it separately in salted water and only adding it to the soup just before serving. This prevents the pasta from becoming too soft and mushy, allowing it to maintain a pleasant bite.
A common mistake is to add vinegar too early in the cooking process. Instead, wait until just before serving to add a splash of vinegar to brighten the flavors of the soup, as this will help balance the richness of the chouriço and the starchiness of the potatoes.
