Paula's Sour Soup
This delicious sour soup (sopa de azedo) has been a tradition in my family ever since I can remember, enjoy.

Ingredients
1 onion, chopped 2 cloves of garlic, chopped 3 tablespoons of olive oil 1 teaspoon of paprika 1 tablespoon of tomato paste 1/2 chouriço, cut into 4 pieces 1 can of red beans 2 big potatoes, cut into cubes2 handfuls of rigatoni pasta Salt (to taste)Pepper (to taste)1 and 1/2 liters of waterVinegar

Preparation
- In a pan over medium heat, cook the onions and garlic in the olive oil for about 3 to 4 minutes.
- Add the tomato paste, paprika, beans, salt, pepper, the chourico and stir.
- Add the water, stir and bring to a boil, than add the potatoes and the pasta and cook for another 10 minutes.
- When serving, add one tablespoon of vinegar to each plate and stir.
