Directions

  1. Lay out the steaks on a cutting board or other flat surface.
  2. Lay slices of garlic on on side of the steaks.
  3. Using a tenderizing mallet, “nail” the garlic to the steak by pounding the slices into the meat.
  4. Repeat on the reverse side of the steaks.
  5. Melt 4 tablespoons of butter in a skillet over medium-high heat.
  6. Fry each steak in the butter for barely two to three minutes, turning once.
  7. Transfer to a dish and cover.
  8. Melt the rest of the butter in the same skillet.
  9. Add the onions and saute until they are golden.
  10. Return the beef to the onions and sauce and heat through for about 30 seconds.
  11. Serve on the toasted sandwich rolls, enjoy!

Recipe Tips

To avoid overcooking the sirloin steak, sear it on high heat for just 1-2 minutes per side. This ensures it remains tender and juicy. Use a meat thermometer to check for a medium-rare doneness, aiming for 130-135°F.
When sautéing the garlic and onions, add a pinch of sugar to the pan after the onions become translucent. This will caramelize them beautifully and enhance their natural sweetness, creating a richer flavor profile for your sandwich.
For a more flavorful sandwich, consider marinating the sirloin steak in a mixture of olive oil, Worcestershire sauce, and a splash of vinegar for at least 30 minutes before cooking. This will add depth to the meat and improve overall taste.

Frequently Asked Questions

Can I use a different cut of meat for the Prego sandwich?

Yes, you can substitute sirloin steak with other cuts like flank steak or ribeye. Just ensure they are thinly sliced to maintain tenderness and quick cooking.

How should I store leftovers from the Prego sandwiches?

Store the leftover meat and onions in an airtight container in the refrigerator for up to 3 days. The buns can be stored separately to avoid getting soggy.

What can I do if my steak isn't tender enough after pounding?

If the steak isn't tender, try marinating it in a mixture of olive oil, vinegar, and herbs for a few hours before cooking. This can help break down the muscle fibers and improve tenderness.

Recommended Drink Pairings

Wine

Portuguese: Douro Red - This wine's rich fruit flavors and robust tannins complement the savory flavors of the sirloin steak and garlic.

General: Cabernet Sauvignon - The bold structure and dark fruit notes of this wine enhance the richness of the butter and steak in the sandwich.

Beer

Portuguese: Super Bock - This lager's crispness and balanced taste provide a refreshing contrast to the hearty sandwich.

General: Pale Ale - The hoppy bitterness and citrus notes of a pale ale cut through the richness of the steak and butter, enhancing the overall experience.

Other Beverages

Iced Tea: A lightly sweetened iced tea with lemon offers a refreshing and slightly tangy contrast to the savory flavors of the sandwich.

What's the coarse salt for? To sprinkle on the sandwich? Just curious because I can't have salt if that's the reason it works for me! ☺ It doesn't specify on the recipe! BTW great job with the recipes Maria & Joe! Thank you for posting and making me hungry! Lol
