Directions

  1. In a bowl, combine Port wine, oil, sugar, lemon zest and anise, mixing well.
  2. Stir in the flour, baking soda, salt and sesame seeds.
  3. Cover and chill for at least 1 hour.
  4. Preheat the oven to 180°C or 350°F and line two sheets with parchment.
  5. Scoop tablespoons of dough onto the sheets and bake the cookies (while the dough is still cold) for 13-14 minutes, rotating the sheets halfway through baking.

Recipe Tips

To enhance the flavor, consider toasting the sesame seeds in a dry skillet over medium heat for 3-5 minutes before adding them to the dough. This will bring out their nutty aroma and add depth to the biscuits.
Be cautious not to overmix the dough once the flour is added; overmixing can result in tough biscuits. Mix just until the ingredients are combined for a lighter texture.
When measuring the Port wine, make sure it's at room temperature to help it incorporate smoothly into the batter. Cold liquids can cause the oil to solidify, leading to an uneven mixture.

Frequently Asked Questions

What can I use as a substitute for Port wine in this recipe?

You can substitute Port wine with another sweet fortified wine like Madeira or Marsala. If you want a non-alcoholic option, try using grape juice mixed with a little vinegar for acidity.

How should I store the Port and Sesame Biscuits after baking?

Store the biscuits in an airtight container at room temperature for up to 1 week. For longer storage, you can freeze them for up to 3 months. Just ensure they are completely cooled before freezing.

What can I do if my biscuits are too soft after baking?

If your biscuits turn out too soft, make sure the dough is chilled adequately before baking. For the next batch, you can also try adding a little more flour to the dough to help firm up the consistency.
