Recipe Tips

Ensure the butter is at room temperature for at least 30 minutes before using; this helps in creaming it with sugar properly, leading to a lighter cookie texture.
When zesting the lemon, avoid the white pith as it can add bitterness to your cookies. Only grate the colorful outer layer of the lemon peel for the best flavor.
Over-mixing the dough after adding the flour can lead to tough cookies; mix just until the flour is incorporated for a tender, crumbly texture.

Frequently Asked Questions

Can I substitute the butter with a non-dairy alternative?

Yes! You can substitute the softened butter with coconut oil, vegan butter, or even applesauce for a lighter version. If using coconut oil, make sure it is softened but not melted.

How should I store the lemon cookies to keep them fresh?

To keep the lemon cookies fresh, store them in an airtight container at room temperature for up to a week. They can also be frozen for longer storage; just make sure to layer them with parchment paper to prevent sticking.

My cookie dough is too sticky; what can I do?

If your cookie dough is too sticky, try adding a little more flour, a tablespoon at a time, until the dough is manageable. Make sure to chill the dough in the refrigerator as the recipe suggests, as this will also help make it easier to work with.
