Directions

This recipe makes about 2 medium jars.

  1. Wash the figs, dry them with absorbent paper, peel and cut them into slices or quarters.
  2. Place them in a saucepan with the sugar, port wine, orange juice and cinnamon stick.
  3. When it boils, turn the heat down and let it cook slowly, stirring occasionally until it has the desired consistency.
  4. Remove the cinnamon stick.
  5. Place in jars previously heated with hot water and well dried.
  6. Place the cap on the jars and turn them over for about an hour.

Recipe Tips

Ensure that the figs are ripe and unbruised for the best flavor and texture. Overripe or damaged figs can lead to a jam that is too watery or lacks depth of flavor.
When adding sugar, consider starting with 2 cups and adjusting to taste during cooking. This way, you can control the sweetness and ensure it complements the natural sweetness of the figs and the acidity of the orange juice.
Avoid cooking the jam at too high a temperature, as this can cause the sugar to caramelize instead of dissolve properly. A gentle simmer allows for better incorporation of flavors and a smoother texture.

Frequently Asked Questions

Can I substitute the Port wine with another type of alcohol or non-alcoholic option?

Yes, you can substitute the Port wine with another fortified wine like sherry, or for a non-alcoholic option, you can use grape juice or simply omit it entirely; just add a little extra orange juice to maintain flavor.

How should I store the fig jam after it's been made?

After sealing the jars properly, store the fig jam in a cool, dark place like a pantry. Once opened, refrigerate and use within a few weeks. Unopened, it can last up to a year.

What if my fig jam does not thicken properly during cooking?

If the jam isn't thickening, you can continue to cook it longer, stirring frequently. Alternatively, you can mix a little cornstarch with water to create a slurry and add it to the jam while it's boiling to help thicken it.

Recommended Drink Pairings

Wine

Portuguese: Tawny Port - The rich, nutty flavors of Tawny Port complement the sweetness of the fig jam beautifully.

General: Late Bottled Vintage Port - This wine's concentrated fruitiness and complexity enhance the jam's flavors while balancing its sweetness.

Beer

Portuguese: Super Bock Stout - The roasted malt flavors of this stout provide a nice contrast to the sweetness of the jam.

General: Brown Ale - A brown ale's caramel notes and moderate sweetness pair well with the fig and orange flavors.

Other Beverages

Espresso: A shot of espresso adds a bold, rich layer that complements the sweetness and spice of the fig jam.

Maybe this is a silly question but....do you use the whole fig or just the inside? I can't mess this up since my tree is young and did not produce much fruit this year.
