Directions

  1. In a bowl, season the rabbit with some salt, taking into account that the pepper sauce is already salty, especially if it is homemade.
  2. Add the chopped garlic, chili pepper, pepper sauce and bay leaves.
  3. Mix very well, drizzle with white wine and marinate for 2 hours.
  4. In a saucepan, heat the olive oil, and fry the drained rabbit pieces with the bay leaves.
  5. Let it fry over medium heat for about 20 minutes and stir occasionally so that it doesn't burn.
  6. After 20 minutes and when the rabbit is golden brown, add the marinade.
  7. Fry for another 10 minutes and stir occasionally to avoid sticking.
  8. After 10 minutes, turn off the heat, drizzle with a little lemon juice and sprinkle with the chopped parsley.

Recipe Tips

When frying the rabbit, ensure the oil is hot enough by testing it with a small piece of bread; it should sizzle immediately. If the oil is not hot, the rabbit may absorb too much oil and become greasy.
Consider marinating the rabbit pieces in the white wine, garlic, and pepper sauce for at least 2 hours (or overnight for best results) before frying. This will enhance the flavor and tenderness of the meat.
Avoid overcrowding the pan when frying the rabbit. Fry in batches if necessary to maintain a consistent temperature and achieve a golden, crispy crust on each piece.

Frequently Asked Questions

Can I substitute rabbit with another type of meat?

Yes, you can substitute rabbit with chicken, which has a similar texture and flavor. Adjust cooking times based on the size of the chicken pieces you'd use.

What should I do if I have leftover fried rabbit?

Store leftover fried rabbit in an airtight container in the refrigerator for up to 3 days. Reheat it in a skillet over medium heat to maintain its crispiness.

What can I do if the rabbit is not browning properly during frying?

Ensure the oil is hot enough before adding the rabbit. If it's not browning, you might need to increase the heat slightly. Also, avoid overcrowding the pan, as that can lower the oil temperature.
