Tips for Success

Ensure that the cod is adequately soaked and rinsed before cooking; this helps remove excess salt and results in a more balanced flavor. A good rule of thumb is to soak it for at least 24 hours, changing the water several times.

For extra crispy croquettes, after forming the mixture into patties, chill them in the refrigerator for at least 30 minutes before baking. This helps them hold their shape and enhances the crispiness when baked.

Avoid over-mashing the potatoes; they should be smooth but slightly chunky for better texture in the croquettes. If the potatoes are too smooth, the croquettes may become gummy instead of light and crispy.

Frequently Asked Questions

Can I use fresh cod instead of soaked cod for this recipe?

Yes, you can use fresh cod instead of soaked cod. If you use fresh cod, simply cook it separately until it is flaky and tender, then flake it and mix it into the potato puree.

How can I store leftover croquettes?

Leftover croquettes can be stored in an airtight container in the refrigerator for up to 3 days. You can reheat them in the oven at 350°F (175°C) until warmed through for best results.

What can I substitute for parsley in the crispy baked cod croquettes | authentic portuguese recipe?

If you don't have parsley, you can substitute it with fresh cilantro or green onions for a different flavor profile. Dried herbs may also work, but should be used sparingly as they are more concentrated.

Recommended Drink Pairings

  • Vinho Verde: This light and refreshing Portuguese wine complements the cod's flavors and adds a crisp finish.
  • Alvarinho: A white wine with citrus notes that pairs well with the richness of the croquettes.
  • Sparkling Water: The effervescence cleanses the palate and balances the dish's texture.
  • Chardonnay: A lightly oaked version enhances the dish's savory elements without overpowering them.
  • Green Tea: Its subtle bitterness and warmth provide a nice contrast to the crispy croquettes.

Question, you say 1lb of soaked cod. Does that mean salted cod that has been soaked? If yes is it 1lb after soaked? Can I use frozen code instead of salted cod?

Yes, salted cod that has been presoaked, and no, 1lb of cod in general. You can use frozen but it won't be as tasty as salt cod Steve.
