Tips for Success
• When separating the eggs, ensure that no yolk gets into the whites if you're planning to whip them for a fluffier pudding. Any fat from the yolk can prevent the whites from achieving maximum volume.
• For a more intense pineapple flavor, consider adding crushed pineapple in addition to the slices. Reduce the condensed milk slightly to maintain the right texture.
• Be cautious with the liquid caramel, too much can make the pudding overly sweet and affect the texture. Start with a small amount and adjust to your taste before mixing it in.
Frequently Asked Questions
Can I use fresh pineapple instead of canned slices?
Yes, you can use fresh pineapple. Just make sure to chop it finely and measure out the equivalent quantity to replace the canned slices. Additionally, you may want to add a little bit of sugar to balance the tartness.
What is the best way to store leftover pineapple pudding?
Leftover pineapple pudding should be stored in an airtight container in the refrigerator. It will keep well for about 3-4 days. Make sure to cover the top to prevent it from drying out.
What should I do if my pudding doesn't set properly?
If your pudding doesn't set, it may be due to undercooking or not having enough cornstarch. You can try baking it a bit longer in the water bath. If it still hasn't set after cooling, you can reblend the mixture with additional cornstarch and bake again.
Recommended Drink Pairings
- Pineapple Mojito: The refreshing mint and lime complement the tropical flavors of the pudding.

- Iced Green Tea: A subtle bitterness and refreshing quality that pairs well with the dessert's sweetness.

Hi Lucy, I don't recommend the spring form because of the water bath, but you can use a bundt cake pan for it or a rectangular loaf pan.
