Recipe Tips

Ensure that the eggs are at room temperature before mixing them with the other ingredients. This helps in creating a smoother texture for the pudding.
When zesting the lemon, be careful to only remove the yellow part of the peel and avoid the bitter white pith underneath. This will prevent the pudding from having an unpleasant bitterness.
Be cautious not to overheat the mixture when cooking it on the stove; it should be heated gently and stirred constantly. Overheating can cause the eggs to scramble instead of creating a creamy pudding.

Frequently Asked Questions

Can I substitute any ingredients in this pudding recipe?

Yes, you can substitute the milk with a non-dairy alternative like almond or coconut milk. For a lighter version, consider using egg whites instead of whole eggs. Just keep in mind that these substitutions may slightly alter the texture and flavor of the final pudding.

How should I store the lemon and milk pudding after making it?

After refrigerating the pudding for at least 12 hours, cover it with plastic wrap or transfer it to an airtight container. The pudding can be stored in the refrigerator for up to 3-4 days. Avoid leaving it out at room temperature to ensure its freshness.

What should I do if my pudding doesn't set properly?

If your pudding doesn't set, it may be due to insufficient heating or baking time. Ensure that the mixture is baked in a water bath at the correct temperature and for the recommended time. If it's still too runny after cooling, you can try returning it to the oven for an additional 10-15 minutes, checking frequently, or adding a bit more cornstarch next time to help with thickening.

Recommended Drink Pairings

Portuguese: Vinho Verde - This light and refreshing wine complements the citrus notes of the lemon pudding beautifully, enhancing its bright flavors.

Beer

Portuguese: Super Bock - This lager offers a balanced profile that won't overpower the delicate flavors of the pudding while providing a refreshing contrast.

General: Light Lager - A light lager's mild flavor and carbonation will refresh the palate and complement the sweetness of the pudding.
