Recipe Tips

When selecting your pumpkin, opt for a sugar pumpkin or pie pumpkin, as they are sweeter and have a smoother texture compared to larger carving pumpkins, which can be stringy and watery.
To enhance the flavor of your soup, roast the pumpkin and carrots in the oven with the olive oil, salt, and pepper for 20-25 minutes at 400°F before adding them to the soup. This caramelizes the sugars and deepens the overall taste.
Avoid adding the garlic too early; sauté it for only 1-2 minutes with the onions at the beginning, as burning the garlic can lead to a bitter flavor in your soup.
