Portuguese Roasted Pork Tenderloin with Sauce Recipe


This delicious Portuguese roasted pork tenderloin with Port wine sauce (lombinhos de porco no forno com molho de vinho de Porto) is easy to prepare.

Ingredients

2 pork tenderloinsJuice of 1 lemonJuice from 2 oranges1 small onion10 cloves of garlic2 tablespoons of honeyPort wine (to taste)1 teaspoon of red pepper sauce1 cup of olive oil1 chili pepper without seeds1 strip of red bell pepper

Instructions

  1. Season the pork tenderloins with the lemon juice and salt and let marinate for 2 to 3 hours (or overnight).
  2. Conbine the remaining ingredients in a bowl and blend it with a hand blender.
  3. Roast the tenderloins with only a drizzle of olive oil at 200ºC or 400ºF for about 1 hour, when they start to color, drizzle a little of the previous preparation over it, turn the tenderloins and drizzle a little more of the sauce (keep some sauce for the final step).
  4. When almost cooked, cut the tenderloins into slices and drizzle the remaining sauce, bake for another 10 minutes and enjoy.
