Tips for Success
• For a more intense flavor, marinate the chicken in a mixture of beer, olive oil, garlic, and spices for at least 2 hours or overnight before cooking. This will enhance the taste and tenderness of the chicken.
• Avoid overcooking the chicken by using a meat thermometer to check for doneness; the internal temperature should reach 165°F (75°C). Overcooked chicken can become dry and tough.
• If you prefer a sauce to accompany the chicken, reserve some of the cooking liquid after browning the chicken, then whisk in a tablespoon of flour and simmer to create a gravy, adding more beer for flavor and consistency.
Frequently Asked Questions
Can I substitute olive oil with another type of oil?
Yes, you can substitute olive oil with vegetable oil, canola oil, or avocado oil. However, using olive oil adds a unique flavor that complements the chicken well.
What should I do if I don’t have beer for the marinade?
If you don't have beer, you can substitute it with chicken broth or apple juice for a different flavor profile. Just be sure to adjust the seasoning since these substitutes are non-alcoholic.
How can I store leftover beer chicken?
Leftover beer chicken can be stored in an airtight container in the refrigerator for up to 3 days. You can also freeze it for up to 2 months. To reheat, thaw in the refrigerator overnight and then warm it in a pan or microwave.
Recommended Drink Pairings
- Pale Ale: The hoppy bitterness complements the richness of the chicken and cuts through the fat.
- Chardonnay: A lightly oaked Chardonnay enhances the dish with its buttery notes and balances the garlic.
- Lemonade: The refreshing acidity of lemonade contrasts nicely with the savory flavors of the chicken.
- Sparkling Water: The bubbles cleanse the palate, making each bite of the flavorful chicken more enjoyable.
- Cold Brew Coffee: The smooth, rich flavors of cold brew provide an interesting contrast to the spices in the dish.

Hi Rose this recipe doesn't ask for pepper sauce, it asks for 2 fresh chilli peppers, cut into thin slices. Hope that helps, don't hesitate to ask anything if you have questions.
