Ingredients

3 chicken breasts1/2 chouriço 1 large can of white beans1 small can of peeled tomatoes (around 200gr or ml)2 carrots1 onion2 garlic cloves1/2 cup of white wine5 tablespoons of olive oil1 pinch of cumin powder1 bay leafChopped parsley (to taste)Salt and pepper (to taste)

Directions

  1. Cut the chicken breasts into cubes. 
  2. Peel the onion and garlic, chop them and cut the carrots into slices.
  3. Heat a pan with the olive oil, add the chicken and cook until golden.
  4. Add the onion, garlic and carrots, also add the sliced chouriço and bay leaf and cook until the onion is transparent.
  5. Then add the chopped tomatoes with the sauce and white wine, season with salt and pepper, cover and cook for 10 minutes.
  6. Then add the white beans with the sauce and the cumin too, stir and cook for another 10 minutes.
  7. Remove from the heat and serve hot sprinkled with chopped parsley.

Recipe Tips

To enhance the flavor of your stew, consider browning the chicken breasts in the olive oil before adding them to the pot. This will create a richer depth of flavor through caramelization.
When adding the white beans, make sure to rinse and drain them well to remove excess sodium and any canning liquid that could dilute the stew's flavor.
Avoid overcooking the carrots and garlic. Add the chopped carrots after the chicken has browned and cooked for about 5 minutes, and add the minced garlic in the last 2 minutes of cooking to prevent it from burning and becoming bitter.
