Coconut Cupcakes (Coquinhos) Recipe

These delicious and sweet coconut cupcakes (coquinhos), take less than 30 minutes to make and make a great sweet snack.

Ingredients

2 cups of shredded sweetened coconut or flakes1 cup of sugar2 large eggsCupcake or muffin paper liners

With all your ingredients and equipment gathered, you are ready to get started!

Directions

  1. Preheat the oven to 200°C or 400°F.
  2. Add the paper liners to a cupcake/muffin pan.
  3. Place the coconut and sugar in a bowl and mix.
  4. Add the eggs and mix well but without mixing it too much.
  5. Pour into the paper liners with the help of a spoon.
  6. Bake for 10 to 15 minutes.
  7. Check continuosly to make sure they don't burn.
  8. Remove from the oven and let them cool slightly.

Recipe Tips

For a richer coconut flavor, consider adding 1 teaspoon of coconut extract to the batter. This will enhance the overall taste and aroma of the cupcakes.
To avoid dry cupcakes, be careful not to overmix the batter once the eggs are added. Mix just until the ingredients are combined to maintain moisture and achieve a tender crumb.
If using unsweetened coconut, increase the sugar to 1 1/4 cups to balance the flavors, as sweetened coconut adds both moisture and sweetness that unsweetened does not.

I'd love to try the recipe but am alittle confused on what type of coconut to use. It's says grated and I'm not sure I know what that is. I know of desiccated and the regulars sweetened bagged kind but not of grated. Could you clarify this please and Thank You : )

2 things Nina, either you don't use the liners when baking, and place them in the liners only after they cool down, or if you do use liners, they peel off fine the next day, so just make them the day before serving.
