- Cut the chicken breasts into a total of 9 strips.
- Preheat a skillet on the stove over medium heat.
- Drizzle with a bit of olive oil.
- In a small bowl, mix together the Port wine, Dijon mustard, salt, and pepper.
- Rub the mixture onto the chicken fillets.
- Wrap a slice of bacon around each chicken strip and place them in the preheated skillet.
- Adjust the salt to taste.
- Cook for about 15 minutes, until the chicken is cooked through and the bacon is crisp, keep rotating so all sides are cooked.
- Serve with a side of roasted vegetables or mashed potatoes.
The original recipe uses maple syrup, I replaced that with Port wine.
