Quick & Creamy Maria Biscuit Pudding Recipe
Ingredients
1 liter semi-skimmed milk (34 fl oz)
3 eggs
1 tablespoon instant coffee
2 packets pudding mix (3.5 oz/100g), fllavor to taste
20 Maria biscuits (or plain tea cookies), crushed
Preparation
In a large bowl, combine the milk and crushed Maria biscuits.
Let them sit for a few minutes to soften.
Separately, dissolve the pudding mix in a small amount of the milk.
Once dissolved, add it to the biscuit-milk mixture.
Add the sugar, eggs, and instant coffee.
Use a blender to mix everything until smooth and well combined.
Transfer the mixture to a saucepan.
Cook over medium heat, stirring constantly, until it thickens to a custard-like consistency.
Pour the mixture into a caramel-coated mold (pre-greased with caramel sauce).
Let it cool to room temperature, then refrigerate for several hours until set.
Once fully chilled and set, unmold onto a serving plate.
Decorate as desired, whipped cream, chocolate shavings, or a sprinkle of crushed biscuits work beautifully.
